Raw Alfredo pasta with kale salad


Pre sauce-ing. Gluten free pasta mixed with zuchini and sweet potato strips.

Kale salad



Yes. This was an amazing dinner. Eaten by myself and two dedicated cheese lovers and this cheese-less Alfredo was definitely up there with the cheesiest, creamiest, butteriest Alfredo’s goin.

Alfredo sauce recipe:

1/2 cup cashews
1/4 mix of macadamia nuts/sunflower seeds (would probably be ok with all cashew)
1 lemon squeezed
1/4 cup nutritional yeast
3 TBS soy lecithin granules (you can get from the health food store)
2 garlic minced
1 tomato
1/2 cup rice milk or water or whatever kind of milk you have

Blend till smooth. Heat up in a saucepan until warm and toss in pasta.

Kale salad:

5 ish leaves of kale chopped
Drizzle of olive oil
Half a lemon squeezed
2 tsp honey
Salt and pepper
Sprinkle of nutritional yeast
Sprinkle of cinnamon
Crushed walnuts

Work the olive oil and lemon into the kale leaves with your fingers, add rest of the ingredients and toss.

We served the pasta on top of the salad With home made raw tomato sauce and it was verrrrrryyy niiiiiice.
