These were a bit of an experiment born out of a dessert craving that turned out pretty well!!
Not the smooth chocolate casing you would get with a traditional peanut butter cup, rather a sort of chewy/crunchy/crumbly/I don’t really know how to describe but tastes good kind of casing.
1/4 of a small avo
2 tablespoons natural peanut butter
1 tablespoon coconut oil
1/4 cup cashews
1/4 cup walnuts
2 tablespoons coconut flakes
1.5 tablespoons cacao / cocoa
1/3 cup oatmeal or quinoa flakes
1.5 tablespoons sweetener of choice
Blend until combined while still a bit crumbly and chunky.
Press about a tablespoon at a time into mini muffin tin or crescent tin. Fill with a bit of natural peanut butter and a dash of cinnamon. Cover with a layer of the chocolate outing.
