Raw vegetable soup

After book club (aka wine club) on Thursday night, visiting with relatives up the coast Friday (more drinking and eating out) and finally a day at the races Saturday (champas anyone??) which we finished off with dinner at our fav pizza place….by Sunday we were feeling a little worse for wear!!!! So we decided to do a juice/smoothie/soup cleanse which is where this delicious soup was born!!
After a green juice and a banana peanut butter smoothie we headed out for a morning of surfing….

…off we go, and by the time we got back we were pretty fricken hungry!!! This soup is soooo good and quick, highly recommended.

Recipe:

-1/2 purple onion diced
-3 garlic cloves minced
-1 TBS coconut oil
-splash of Tamari, red pepper flakes, cumin, ginger

Sauté above ingredients in a pot until fragrant.

-1 heaped TBS miso paste
-1 heaped TBS tahini
– small handful of cashews
-drizzle of olive oil
-2 tomatoes
-3 big handfuls of spinach
-1/2 red capsicum
-1/4 cup sun dried tomatoes
-1/4 cup nutritional yeast
– salt and pepper
-1 cup green juice pulp (or just extra spinach if you don’t have pulp)

Blend above ingredients until smooth-ish, best of it’s still a bit chunky.

Add blended soup to pot as well as adding one chopped green onion and the other half of the capsicum diced. ( adds nice texture) heat until warm and enjoy 🙂 🙂
